Passion Orange Chiffon Pie

YIELD: One 9-inch pie


The taste and texture of this pie is an unbeatable combination.


A pie with a slice removed, featuring bright orange filling, whipped cream topping, and an orange slice garnish. Several whole oranges are placed beside the dish on a white surface.

Ingredients

  • 1 9-inch pastry shell

  • 4 eggs, separated

  • 1 cup sugar

  • 1/2 tsp. salt

  • 1/2 cup HAWAII'S OWN frozen passion orange concentrate, undiluted

  • 1 Tbsp. unflavored gelatin

  • 1/4 cup cold water

  • 1 tsp. grated lemon rind

  • 1/2 cup whipping cream, whipped



Directions

  1. Beat yolks until thick. Add 1/2 cup of the sugar, salt and concentrate.

  2. Cook on the thermostatically controlled stovetop burner.

  3. Set at 150° F until thick, beating constantly.

  4. Soften gelatin in cold water; add to egg yolk mixture and stir until dissolved.

  5. Add lemon rind and cool.

  6. Beat egg whites until stiff, gradually beating in the remaining 1/2 cup sugar.

  7. Fold egg yolk mixture into stiffly beaten egg whites.

  8. Serve with whipped cream.
